Traditional Fried Oysters
Ingredients
- 12 shucked Willapa oysters
- 1 egg
- ½ cup flour
- ¼ cup Krusteaz fry mix
- ¼ cup Italian dry bread crumbs
- Oil for frying
- Beat egg with 1 tablespoon water in small bowl, put flour in another bowl, mix crumbs with fry mix in third bowl.
- Heat oil in skillet until med-hot, about 350°. Roll each oyster in flour, dip in egg mixture and then roll in crumb mixture.
- Fry until golden brown on each side.
- Serve hot with lemon wedges, tartar sauce (see ‘Tartar Sauce’ recipe) or salsa (see ‘Fresh Tomato Salsa’ recipe).
For lighter breading omit flour. For even lighter breading omit flour and egg using only the crumb-fry mix. Consider frying up a few extra oysters to use the next day in a Hangtown Fry (see ‘Hangtown Fry’ recipe) or Poor Boy Sandwich (see ‘Dianne’s Oyster Poor Boys recipe).
