Christmas Stew
Ingredients
- 1 quart Willapa oysters and liquor
- 4 tablespoons butter
- ¼ teaspoon anchovy paste
- 1 tablespoon Dijon mustard
- 3 cups celery – finely chopped
- 1 quart cream
- ¼ cup dry sherry – optional
- Salt and pepper to taste
- Paprika and parsley for garnish
- Melt butter in large saucepan, add anchovy paste, mustard and celery. Cook until limp.
- Stir in remaining ingredients and heat until oysters are plump and curled.
- Serve hot with paprika and parsley garnish.
This is a special treat for Thanksgiving or Christmas.
